4 Fruity Recipes to Ring in Spring
Writing this while anxiously waiting for the local fruit stands to open
Spring has arrived (mostly). And with it, fruit!
Fruit-enthusiasts rejoice! We’ve survived winter and are about to be rewarded for enduring months of bananas, apples and oranges with a colorful variety of textures and tastes.
Is it weird to get so excited about fruit? Maybe, but I do write a food blog so I guess it checks out.

Nectarine And Goat Cheese Pissadelière
Originating in Provence, France, pissadelière is a pizza-like street food. This recipe was adapted from a Cook’s Illustrated one - photocopied and sent to my mom by my expert baker grandfather. He lovingly referred to the pissadelière as a French pizza, and that it is.
Traditional this recipe is not. Here, we forgo the usual caramelized onions and anchovies in favor of seasonal nectarine and goat cheese. The pissadelière dough is a great base for a fruity, cheesy, sweet flatbread, something that could easily be eaten for dessert or for breakfast.
This Nectarine Goat Cheese Pissadelière would make a great addition to a Sunday brunch, as an afternoon snack with a cup of tea or coffee or a sweet and savory dessert component for your next dinner.
Simple Strawberry Salad
Let’s be real — there are ALOT of “strawberry salads” out there. While I love some fresh peppery arugula, I wanted something different with this salad. The result really could be called fancily dressed strawberries more than what may typically come to mind when hearing the words Strawberry Salad.
There’s only a few simple ingredients in this recipe, and the more of them you can obtain fresh and locally the better. This recipe will only be as good as your strawberries, so splurge for the good ones! I promise it’s worth it.
Decadent Peach Buckle
A buckle is similar to a cobbler, but instead of biscuit dough, a buckle uses a cake-like batter. Classic buckles include a crumbly topping, but to keep things simple, I decided to omit it from this recipe.
You could think of this as the best peach cake you’ll ever make. And because it’s a buckle by nature - it’s incredibly simple. No icing or leveling needed. Fact: the more rustic a buckle looks, the better it tastes.
Simple Strawberry Cake (Dairy-Free)
While we’re on the topic of cake, how about this one? It’s a simple strawberry cake made from a boxed muffin mix. Yup. It comes together in 15 minutes with the help of some homemade strawberry milk for a luxe spring feel.
You can easily (and deliciously) make this recipe with any milk alternative instead of dairy. Oat milk is always my go-to, but almond or even coconut would work well too.
The sturdiness of the muffin mix holds up the strawberries beautifully. While a traditional white cake mix is too thin and the strawberries all sink to the bottom, this muffin mix allows the strawberries to distribute evenly throughout the batter and hold their position during baking. The result is a fluffy cake dotted with jammy strawberry goodness.
